For one customer who never established a bookkeeping system and had the IRS after him, I had to go back through five years of receipts, bank statements and miscellaneous - as well as keep up the current books, in order to present to his CPA and the IRS.
The way I have done it before was to have the client mail me his receipts and bank statements. I was then able to establish a bookkeeping system. From this I was able to reconcile his bank accounts, keep track of his income, expenses(accounts payable and receivable), pay bills and provide monthly reports.
This was a win-win situation. I worked as a contract laborer and not employee (although I like both ways), I was able to utilize my home office, got paid a monthly retainer to do his work, and was still able to do other freelance work.
